Description: With a style leaning towards modern Mediterranean, Paua strives to serve seasonal creative dishes at a very affordable price for Sydney siders. Mouth watering dishes include vanilla cured Salmon with pickled cucumber, an intensely smoky Herb ash milk fed veal tenderloin with eggplant, pear and caper caponata and a delicious sweet and earthy Jerusalem artichoke Brulee with caramelised baby beets. We see this as a work in progress. We see this restaurant evolving, developing and responding to the local community. If we find ourselves aiming for a chefs' hat, then that's where we will go. But at the same time we are fundamentally a neighbourhood restaurant, says Saxon and Hyde. The couple met in the kitchens of La Mensa and worked together in Sydney, Auckland and London before returning home to launch their own venture. New Zealand-born Saxon was a former head chef from Le Lavandou in Sydney, Euphorium in London and Paramount in Auckland. He was also a former Pastry Chef from Smiths of Smithfield in London and Sous Chef at New Zealand's acclaimed Vinnies in Auckland Hyde is Adelaide-born and a former Sous Chef from La Mensa in Sydney, Euphorium in London and Chef de Partie at Smiths of Smithfield in London. Paua is not about looks, flashy designs or heavy financial backers. Paua is about honest, affordable flavours created by two chefs pursuing their passion for good food.
